So, who is Leon?

Leon was the grandfather of Chef Nick’s business partner, Hunter Briley. Leon was a welder by trade and a proud Cajun. He had his faith; loved his family and his country.

To know Leon was to know the essence of hospitality. When not traveling for work as a pipeline welder along with his wife Lea, Leon spent his time visiting hospitals and retirement communities. Leon delivered food, clothing or money to those in need. His hand was available to anyone that needed it.

Leon knew how to connect with people. When he couldn’t be near the people he cared about, he would write. Family, friends and acquaintances knew when a letter from Leon came because of his signature green ink. Leon carried green pens with him up until the day the pens were discontinued. He was so distraught by this that he wrote to the manufacturer pleading his case to put the green ink pens back in production. While Leon was not able to change their mind, the manufacturer did run a limited production of one case and shipped them to Leon, ensuring he’d have enough of his beloved green ink for the rest of his days.
